Q: What is gluten?
A: Gluten is the common name for the proteins found in wheat, rye, and barley. These proteins help many different foods maintain their shape and elasticity.  Gluten is commonly found in most bread and baked goods; however, it can be found in many other foods as well.

Q: What do we mean by gluten free menu?
A: At Jeremiah's Kitchen, we do not bring in free floating or potentially airborne gluten products such as seasonings or flour.  In fact our entire menu is built around the idea of gourmet gluten free food.  We focus on serving whole foods in their natural state without adding any gluten or other additives to a product that otherwise would be gluten free.  The only ingredients we allow in our building that contain gluten are for the Chicago-Style menu.  We pride ourselves in our allergen safety, and we keep these items in separate containers to avoid cross-contamination.  We have dedicated gluten-free fryers and a dedicated gluten-free grill to ensure our kitchen is safe for those with celiac disease.

Q: What is the Chicago-Style Menu?
A: Chicago’s Finest was a unique eatery of Southern Illinois.  Having been in the Marion community for several years, many patrons were sad to see this go.  The Griesbachs are excited to continue this tradition and keep serving the top-selling Chicago-style items due to the overabundance of requests.  While not part of the original menu, we have gladly incorporated these existing items to offer a wider variety to our patrons without compromising our allergen safety.  All of the Chicago-style items are available regular or gluten-free.

Q: Is gluten-free food healthier?
A: This question is at the center of many debates in the medical world today.  There are thousands of articles both for and against a gluten-free diet.  However, the answer to this question is not a simple yes or no.  For some people, a gluten-free diet is essential due to a sensitivity to gluten or some other medical reason such as Celiac Disease.  It is our wish to provide a safe food alternative to those customers that must eat gluten-free. So, to answer the question, for people who cannot tolerate any amount of gluten because of a medical condition, a gluten-free diet certainly is healthier. We invite everyone to enjoy our gluten-free food and see what it does for you.

Q: Does gluten-free food taste different?
A: Gluten-free foods can sometimes taste different because they are made from different ingredients than what are most commonly used.  Our food, however, is different than any gluten-free food you may have tasted before.  We focus on preparing foods that are naturally gluten-free, so that the integrity and taste of the product is not compromised. We let the majority of our five star reviews on social media networks speak for themselves. As Jeremiah always says, if you can tell that it is anything other than great food, we won’t make you pay for it.
